Stuffed Eggplant:
Ingredients:
Eggplant (elongated) 2
Beef mince (boiled) 1 cup
Tahini paste 1 tbsp
Chopped onion 1
Chopped tomato 1
Salt to taste
Paprika ¾ tsp
Green coriander as required
Cumin powder ½ tsp
Cinnamon 2 pinch
Crushed garlic 1 tsp
Finely cut mint 1 tbsp
Chopped pistachios 4 tbsp
Method:
Take eggplant cut and remove the inside. now add salt, oil, cumin powder and cinnamon then bake in oven till than eggplant soft. then heat oil and add chopped onion and crushed garlic sauté. After this in beef mince add salt, paprika, cumin and cinnamon add and mix well. now add oil rice, green coriander, tomato, finely cut mint and tahini paste mix. Then fill in eggplants and garnish with tahini sauce and chopped pistachios .
